Filipino Chicken Adobo is a savory, tangy, and tender stew, often considered the national dish of the Philippines, featuring chicken marinated and simmered in a blend of soy sauce, vinegar, garlic, bay leaves, and black peppercorns. The sauce is reduced into a glossy, intense glaze that is typically served over jasmine rice.
